Ingredients

For the chicken and vegetables

  • 1 ½ to 2 pounds boneless, skinless chicken thighs or chicken breasts

  • 2 medium sweet potatoes, peeled and cubed

  • 3 cups fresh green beans, trimmed

  • 2 tablespoons olive oil

  • 1 teaspoon garlic powder

  • 1 teaspoon onion powder

  • 1 teaspoon smoked paprika

  • ½ teaspoon salt

  • ¼ teaspoon black pepper

For the honey garlic sauce

  • 3 tablespoons honey

  • 2 tablespoons olive oil

  • 2 tablespoons coconut aminos or low-sodium soy sauce

  • 2 cloves garlic, minced

  • 1 tablespoon fresh lemon juice

  • ½ teaspoon Dijon mustard, optional

Instructions

  1. Preheat oven to 400°F. Line a large baking sheet with parchment paper.

  2. Add cubed sweet potatoes to the baking sheet. Drizzle with 1 tablespoon olive oil and season with half of the garlic powder, onion powder, smoked paprika, salt, and pepper. Toss well.

  3. Bake the sweet potatoes for 15 minutes to give them a head start.

  4. While the sweet potatoes bake, mix the honey garlic sauce in a small bowl: honey, olive oil, coconut aminos or soy sauce, minced garlic, lemon juice, and Dijon mustard.

  5. Remove the baking sheet from the oven. Add the chicken and green beans to the pan.

  6. Drizzle the chicken and green beans with the honey garlic sauce. Sprinkle the remaining seasoning over everything.

  7. Return the pan to the oven and bake for 20–25 minutes, or until the chicken reaches an internal temperature of 165°F and the sweet potatoes are tender.

  8. Let the chicken rest for 5 minutes before serving.

Optional Add-Ons

  • Serve over brown rice or quinoa for a heartier meal.

  • Add avocado slices for extra creaminess.

  • Add a sprinkle of sesame seeds or chopped parsley before serving.

  • Swap green beans for broccoli, zucchini, or bell peppers.
